When we think of Sprouts, the first thing that comes to our mind is Moong Sprouts. Well, even I am like that. But I take effort to make sprouts with other stuff as well sometimes. This is a result of one such effort.
Even if you do not have the time to sprout the peas, do soak and cook it. Try this recipe. It is very simple, yet we all loved it.
Ingredients (Serves 6)
Cauliflower florets 1 medium ( 3 cups)
Potato 2
Cow Peas/Red Chori Sprouts 3.5 cups (1.5 cups dry)
Onions 2
Cumin 1 tsp
Curry leaves 2-3 sprigs
Ginger chopped
Green Chilli 3
Coriander powder 1 tbsp
Red chilli powder 1 tsp
Coconut 1/4 cup
Method of Preparation
1. Soak the cow peas over night. Drain and let it sprout for 2-3 days.
2. Cut the cauliflower into florets. Add to a microwave safe bowl and let it steam till it is almost cooked. This helps in reducing the cooking time.
3. Boil potatos or steam in microwave. Peal and cube them.
4. Heat a little oil in a pan. Add cumin, curry leaf and ginger.
5. When it sizzles, add chopped onions. Saute till it is slightly browned.
6. Add sprouts. Saute for a couple of minutes. Sprinkle water, cover and cook till it is almost done.
7. Add cauliflower and potatoes along with coriander powder, chilli powder, coconut and salt. mix everything. Add about 1/4 water (or less).
8. Cover and cook till it all comes together and is all mashed up. Keep checking in between. Otherwise it will stick to the bottom. Sprinkle water as needed.
Serve with roti.
