A super easy to make Blondie recipe. You wonder what a blondie is? Well its kind of similar to Brownie, but blonde :-). It is made without the cocoa powder. The dough has a very cookie like texture. And the finished bake is crumbly on the top and edges, and soft in the middle with an overload of chocolate chips. I had this recipe written down in my book for a while and have made it many times. Wonder what the source was. It was definitely from a TV show.
Ingredients
Butter 115 gms 1/2 cup
Light Brown Sugar 100 gms, 1/2 cup
Sugar 50 gms, 1/4 cup
Egg 1
Vanilla 1 tsp
Flour 130 gms 1 cup
Baking Soda 1/2 tsp
Salt 1/2 tsp
Chocolate Chips 200 gms
Method of Preparation
1. Preheat the oven to 175 C. Grease and line a 8 inch square baking tin with parchment paper.
2. Make sure all the ingredients are at room temperature. Cream the butter till soft. Add the sugars and beat till it is soft and combined.
3. Add the egg and beat for another 5 min or so till its soft and pale.
4. In a different bowl mix the flour, baking soda and salt. Add to the mixing bowl little at a time, mixing in between.
5. Finally add the vanilla and chocolate chips and give it a mix.
6. Transfer to the baking pan and level out. Bake at 175 C for 25 - 30 min (I baked for 28 min).
7. Let it cool in the pan for 5 min and then on a cooling rack for 30 min. Cut into squares (makes 16) and serve.
