Potato Logs - Potato Sticks - Kids Lunch Box 1

As I posted earlier that I will be posting some Kids Lunch Box recipes and ideas. I am starting with my son's favourite recipe - the potato logs or potato sticks. This recipe was given to me by Niv of Panfusine

Lunch below is Potato sticks (just 3 this time) with ketchup, yogurt, juice and fruit.



Ingredients (Makes 5 sticks)

Potato 2 medium
Bread 2 slices
Coriander leaves  1 tsp (optional)
Lemon Juice 1 tsp (optional)
Oil to fry

Spices
Chilli Powder a pinch
Turmeric Powder a pinch
Salt 1/4 tsp (as required)

Method of Preparation

1. Steam the potatoes. I pop them into the microwave for 2-3 min turning them once in between till it is cooked.

2. Peal and mash it with a fork.

3. In the mean while, dip the bread slices (crust and all) in water and squeeze out the water.

4. Add to the potatoes. Add all the spices and herbs that you are using. Mix well.

5. Divide into 5 portions. Roll into logs.

6. Heat a little oil in a tawa and cook the potatoes rotating them as needed till it is browned on all sides.

Serve with some tomato ketchup

Other lunch options with the same main course.
Potato sticks with ketchup, steamed buttered corn (stream frozen corn in microwave, add butter, salt and pepper), yogurt and fruits.


Potato sticks (just 3 sticks this time) with yogurt, chocolate chunk cookies and kiwi.

Recipe for Chocolate Chunk cookie here. The dough can be prepared and rolled in advance. It can be baked from frozen a few at a time as required.
