Vegan Mashed Potato

Mashed Potatoes are a very popular side dish served in America and England. Though I love potatoes in most forms, this is one form that I never took a liking to. But little one and husband love it. Its probably their favourite potato recipe. I prepared this Vegan Healthy Mashed Potato with my Christmas Dinner.



Recipe adapted from here. I have prepared only a very small portion.

Ingredients

Potatoes 4
Cashews 1/4 cup
Water 1/4 cup
Lemon Juice 1 tsp
Olive Oil 1 tbsp
Salt 1/ tsp
Onion Powder 1/2 tsp
Garlic Powder a pinch

Method of Preparation

1. Peal and cube potatoes into big chunks.

2. Steam for about 15-20 min till fork tender.

3. Rinse the cashews in hot water.

4. Blend the drained cashews, water, lemon juice, olive oil, salt, onion and garlic powder in blender and blend until very, very smooth.

5. Transfer potatoes to a mixing bowl, and add blender mixture. Do not allow potatoes to cool.

6. Mash potatoes with a potato masher. Add a small amount of hot water if necessary to achieve a soft mash potato consistency. Do not over-mix or potatoes will be gooey rather than fluffy.

7. Add salt as desired.

  3. can we use onion n garlic paste instead of powder?

    1. paste would not work here as it would have a raw taste. you could roast garlic and add.. that will give a nice taste. if not just skip it. if you do not need it to be Vegan, add some cream or milk.
