Winter is nearly over, there is still time to tuck in with some warm soups. This soup has been in my drafts for a while. I had started writing the post as 'winter is nearly here'. So here I am a couple of months later changing that to winter is nearly over. :-)
This is a very hearty soup with loads of flavours going on. Don't worry, the flavours are all in your mouth, there is hardly any ingredient in it. That is the beauty of this simple soup. Pair it with some freshly baked bread and dinner is served.
I served the bread with some freshly baked Bialys
Ingredients
Onion 1
Potato 2
Carrots 2
Red Pepper 5 (i used jar with 5 roasted peppers in it)
Garlic 3 pods
Tomato Puree 1 tbsp
Water 2 cups
Milk or Cream 1/2 cup (optional, I did not use it)
Chilli Powder 1/2 tsp
Oil and salt to taste
Method of Preparation
1. Heat a little oil in a ot. Add onions and garlic and saute till it becomes translucent.
2. Add potatoes and carrots. Saute till they are almost cooked. You can add some water to help it along.
3. If using fresh peppers, roast them in fire and then cool and peal them. Else chop and add them to the pot.
4. Add tomato puree and chilli powder along with a little salt. Mix them and simmer for a couple of minutes.
5. Cool and grind into a smooth paste adding some water.
6. Transfer back to the pot. Adjust consistency and seasoning.
7. Bring to boil. Simmer for a couple of minutes.
Serve with some warm bread.
Very delicious and definitely an aromatic and delicious soup.
