Puff Pastry sheets are very commonly used in our house. I make a variety of Indian Puff Items like the Soya Puff or the Egg Puff. The Pesto Sauce I used is yet another family favourite and I have used in it many variations including this Creamy Vegan Pasta and Potato Sandwich
When I needed to make a quick starter for a group of friends, I chose to make this simple Pesto Tarts which turned out to be a huge hit at the party.
Ingredients (Makes 12 medium pieces)
Puff Pastry Sheets
Cashew and Sundried tomato Pesto (see recipe below)
Also add any other topping of choice like onions, peppers, olives, sundried tomatoes etc.
Method of Preparation
1. Defrost the Puff Pastry sheet. Cut it into small squares.
2. Spread Pesto on it. Leave a little edge without the sauce.
3. Preheat oven to 200 C and bake for 15 min (follow package instructions for puff pastry).
Ingredients (You will probably need a third of this. Use left overs as pasta sauce or sandwich spread. Both taste awesome).
Cashew 3/4 cup
Garlic 2 pods
Sun Dried Tomatoes 3/4 cup (almost drained)
Tomatoes 2
Basil 1/2 cup (packed)
Parmesan Cheese 1/2 cup (optional, I have not used it).
Red Chilli Powder 1/2 tsp
Pepper 1/2 tsp
A little salt
A little olive oil (optional)

1. Powder the cashews.
2. Add the rest of the ingredients and whiz together till you get a paste.
