I am sorry to have disappeared from the blog for 3 weeks. Holidays and other commitments came in the way. Now that I am back to blogging, let me present to you a very simple, healthy, flavourful side dish.
Bhindi Do Pyaza is a side dish made with Bhindi or Okra. It has loads of Onions in it and hence the name (do means 2 to indicate double and pyaz is onion).
Ingredients
Okra/Bhindi/Vendakka about 20-30
Onions 2 (3 even better)
Mustard Seeds 1/2 tsp
Jeera/Cumin 1 tsp
Curry Leaves 2-3 sprigs
Turmeric Powder 1/2 tsp
Chilli Powder 1 tsp
Garam Masala 1/2 tsp
Hing a little
Oil and salt to taste
Method of Preparation
1. Heat a little oil in a pan. Add mustard seeds.
2. When it sputters, add the cumin seeds and curry leaves.
3. When it sizzles, add sliced onions. Saute till it brown a little.
4. Add Okra cut into 3-4 pieces. Saute till the okra is cooked. Do not cover and cook. Keep an eye to make sure that it does not burn.
5. Add the turmeric powder, chilli powder, garam masala and salt. Mix and cook for a few minutes.
Serve with some Rice or some Roti or Naan Bread
