Beetroot Masala (british style beetroot curry)

Ingredients
Rice 2 cups
Beetroot Grated 4 cups (i used 2 large ones)
Bay Leaf 1
Cinnamon 1
Clove 2
Onion 1
Garlic 4 pods
Cumin Seeds/Jeera 1.5 tsp
Turmeric 1 tsp
Garam Masala 1 tsp
Curry Leaves few
Salt to taste
4 cups water
Method of Preparation
1. Heat a little oil in a pressure cooker (use a pot if you do not have pressure cooker). Add the bay leaf, cinnamon, clove and cumin seeds.
2. When it sizzles, add chopped onions, curry leaves and garlic. Saute till it starts to brown.
3. Add grated beetroot, turmeric and garam masala. Saute for a couple of minutes.
4. Add Rice and saute for 2 more minutes.
5. Add water and salt. Mix well.
6. Cover and pressure cook for 2 whistles. If using a pot, cover and let it cook in medium low heat till water is fully absorbed.
7. When the pressure is released, open and gently toss it with a fork.
Serve with some Raita
