Vegan Double Chocolate Muffin - Chocolate Banana Muffin

Who does not love Chocolate? So when it comes to chocolate, the more the better. Don't you agree? Its been a while since I baked cake/muffin etc. Have been just baking breads/pizza etc lately. Last week it was half term holidays. My son and I decided to make something to enjoy, like old times. We used to do a lot of baking together last year when he was less busy with school, after school etc. It was loads of fun.

I have tried to make it as healthy as I can. Sugar used is lesser than I used before. I am thinking I can reduce it a little bit more next time. This did seem quite sweet. It came out moist and yumm. Note to self - Double to recipe next time :-)







Ingredients (Makes 7 muffins)

All Purpose Flour 1 cup (130 gms)
Cocoa Powder 1/4 cup (23 gms)
Sugar 1/2 cup (100 gms)
Baking Soda 1 tsp
Salt 1/4 tsp

Banana 1 mashed
Oil 4 tbsp
Yogurt 2 tbsp (use soy for vegan)
Milk 1/4 cup (use soy for vegan)
Vanilla 1 tsp

Chocolate Chips 50 gms

Method of Preparation

1. Add the flour, cocoa powder, sugar, baking soda and salt to the mixing bowl. Mix well.

2. Add oil, yogurt, milk and vanilla essence.

3. Mash the banana very well and that well.

4. Mix everything together till combined well. Finally add the choc chips reserving a few to add on top.

5. Line the baking tray with liner. Preheat oven to 180 C (360 F).

6. Scoop the batter to the cup cake liner. Use an icecream scoop to get uniform sized muffins, 1 scoop per muffin.

7. Bake for about 18-20 min till the tester comes out dry.

Let it cool on a wire rack! Enjoy!
