Pidi Kozhakattai is a steamed sweet dumpling made out of of rice. I have posted a savoury version of the same before. It is prepared for Ganesh Chathurti.
Ingredients
Rice 1 cup
Jaggery 1 cup
Water 2 cups + 1/2 cup
Cardamom Powder 1/4 tsp
Coconut 1/2 cup
Method of Preparation
1. Wash rice in water. Spread it on a towel or a bowl and let it dry for a couple of hours.
2. Dry roast in a pan till it is slightly pink.
3. Powder to a coarse rava, like semolina.
4. Heat jaggery with 1/2 cup of water. When it comes to boil, switch off and filter any impurities.
5. Heat 2 cups of water in a pan. When the water comes to a boil, add the coconut.
6. Slowly stir in the rice rava. Keep mixing till the water is all absorbed.
7. Now add the jaggery syrup along with the cardamom powder. It will become liquid again. Keep mixing till water is again absorbed, but the dough is moist.
8. When cool enough to handle, roll into dumplings and steam for 10-12 min.
