When it comes to cookies almost nothing can beat a Chocolate Chip Cookie. But what happens when the base is also a chocolate. Yumm. I would have baked a double chocolate chip cookie. That was the initial plan. But then I bought some peanut butter chips when we were in US. Ok. Now I love the combination of Chocolate and peanut butter. What's not to love?
When we baked this Coconut Lime Cookies last week, my son decided that was the best cookies that he has eaten. But then that was till we baked these chocolate peanut butter chip cookies. If you can't find peanut butter chips, try substituting with reeses peanut butter cup cookies.
Ingredients
All Purpose Flour 3/4 cup, 98 gms
Cocoa Powder 1/4 cup, 22 gms
Baking Soda 1/4 tsp
Salt 1/8 tsp
White Sugar 1/4 cup, 50 gms
Brown Sugar 1/4 cup, 53 gms
Butter 1/4 cup, 57 gms
Peanut Butter 1/8 cup, 33 gms
Egg 1
Vanilla 1/2 tsp
Water 1 tbsp
Peanut Butter Chips 3/4 cup, 125 gms
Method of Preparation
1. In a mixing bowl, beat butter, peanut butter, white sugar and brown sugar till light and fluffy.
2. Add the vanilla, egg and water. Beat again.
3. In another bowl, add the flour, cocoa powder, baking soda and salt. Add that to the mixing bowl and beat till combined.
4. Finally add the peanut butter chips and mix.
5. Line a baking sheet with parchment paper. Preheat oven to 190 C (375 F).
6. Scoop out tbsp of batter and place it on the baking sheet. I placed them in a small plate and popped them in the fridge while my oven was preheating, about 10-15 min.
7. Then rolled them lightly and flattened a little.
8. Bake in batches (of 6). It will take about 8-9 min to bake. Check for the first batch and decide for the rest.
