Diamond Chips

Diamond chips (also called Thukkuda) brings back memories of my mom making it. During Diwali season, she used to make a lot of bhakshanams. Salt and Sweet chips were always part of the menu.

She used to make all Bhakshanams in a kerosene stove instead of the regular gas stove. Those days getting a cylinder for the gas stove was difficult. So she used to worry that if she made bhakshanams in that, it will run out fast during Diwali month.

When I try out different things, I realize how difficult it must have been for her to make all different stuff in Kerosene Stove.

The taste of her cooking still lingers in my memory. I miss you mom!


Ingredients

Maida 1 1/2 cups (All purpose flour)
Ajwain (Omam) 1/2 tsp (optional)
Chilli powder 2 tsp (depending on how spicy you want it. I used just 1/2 tsp so that my son can enjoy it better)
Salt 1 tsp
Hing a little
Butter 3 Tbsp (use oil for Vegan version)

Method of Preparation

1. Take all the ingredients in a bowl


2. Mix by adding water little at a time to make dough like for Chappati


3. Make 6 small balls with it.


4. Roll it like you make chappati. If you roll nice and thin, you will get crisp chips



5. Run a knife thru it horizontally and vertically to create small pieces. Special cutters are available for this. it is a spoon with a wheel at the base. Pizza cutters might work as well.


6. Put it a paper towel or plate to dry and repeat for all the dough. Do not worry if they overlap. It will separate out when you put it in the oil


7. Heat oil in a pan and transfer the chips one set at a time. This is the easy part. The chips will be done in less than a minute.


8. Transfer when done. If you added a lot of chilli powder, you will get deaper colour. Salt versions will be slightly less brown.


9. Enjoy with an afternoon tea or as we did on a Friday night with movie
