Mexican Brown Rice with Cilantro and Lime - Chipotle Inspired

Mexican rice is a very versatile dish. You can serve this as a meal on its own. It goes very well with vegetarian sides or chicken. This can be used as a stuffing for burritos or wraps. The options are many.


This rice has a wonderful balance of spicy and tangy taste. Perfect for any Mexican dinner party!

Ingredients

Brown Rice 2 cups (about 400gms)

Onions 2 finely chopped
Garlic 6 pods finely chopped
Green Jalapeno Pepper 2
Red Jalapeno Pepper 2
Cumin Powder 1.5 tsp
Pepper Powder 1/2 tsp
Coriander Leaves/Cilantro 1 big bunch (30-40gms) finely chopped
Oil and Salt to taste

Dressing
Lime Juice 1/4 cup (about 2 limes)
Olive Oil 1 tbsp
Mixed Dry Herbs (mine was a mix of oregeno, rosemary and thyme) 1.5 tsp

Method of Preparation

1. Bring a pot of water to boil. Wash the brown rice till the water runs clear. Add to boiled water. Simmer the rice till it is cooked. Drain the excess water.

2. Heat some oil in a pan. Add chopped onions. Saute for a couple of minutes.

3. Add chopped garlic and peppers. Saute for a few more minutes till the onions are nicely coloured.

4. Add pepper powder and cumin powder. Mix well.

5. Switch off gas. Add chopped coriander leaves and salt. Mix well.

6. In a bowl whisk the lime juice, oil and herbs.

7. Add the rice and the dressing to the pan. Mix everything together till combined.
