Ajwaini Aloo Gobi - Potatoes and Cauliflower cooked with spices

Ajwaini Aloo Gobi was a new experiment that I did the other day. I roasted the vegetables tossed with the spices in the oven. It is now my favoutire Aloo Gobi side dish.

I made this for a party. So the serving size is for 6-8 ppl. Adjust accordingly.

Ingredients
Aloo 1kg of baby potatoes
Gobi/Cauliflower 1 big one.

For the paste
Ginger 1 big piece
Garlic 6 pods
Green Chilli 1
Pepper 1 tsp
Ajwain 1/2 tsp
Chilli Powder 1/2 tsp
Star Anise 4
Clove 2
Cinnamon 1 inch piece
Turmeric 1/2 tsp
Salt to taste
3 tbsp oil

Method of Preparation

1. Cut the potatoes into rounds. I cut smaller ones by 2 and slightly bigger ones by 3.

2. Separate the florets of the cauliflower.

3. Grind all the ingredients under 'for paste' into a fine paste. Do not add any water.

4. Toss the vegetables with the paste.

5. Line a baking tray with foil. Layer the vegetables. Drizzle some oil on the top.

6. Preheat oven to 200 C and then roast for about 30 minutes tossing every 10 minutes.

It will be good if you can cook them separately. I did not have enough time. So cooked together. Cauliflower cooked quickly. So I did not get that roasted look.

Apple Fritters

I am a big fan of Pazham Pori (Banana Fritters). When I was paired with Harini last month for Blog Hop Wednesday, I saw these Apple Fritters in her site. I ended up making this Apple Raisin Oatmeal that week. I could not resist not making these. I changed from her bajji to using the batter same as Pazham pori.

I really loved these. The steamed apple was heavenly in the mouth.

Ingredients
Apple 1
Maida/All Purpose Flour 1/2 cup
Sugar 1 tsp
Turmeric 1/2 tsp
a pinch of salt

Oil for deep frying.

Method of Preparation

1. Mix the maida, sugar, turmeric and salt with little water to make a thick batter.

2. Slice the apple into small wedges.

3. Heat oil in a pan. Dip the sliced apples in the batter and fry them in the oil.

Serve with a hot cup of tea or coffee.

Nutella Strawberry Sandwich

Do you love Chocolate covered Strawberries? What's not to like, isn't it? Now imagine the goodness if the chocolate is Nutella. I love dipping fruits, especially strawberries and banana in chocolate.

Fill your toast with the goodness of Nutella and Strawberries and I guarantee you will love it. It is so much better for the little ones than eating store bought jams/jellies.

Oh, don't think it is just for the kids. If you are a kid at heart just like me, you will enjoy this any time of the day. This is my new favourite for that - feel like eating something while watching movie on a Friday night.

Ingredients

Bread 2 slices
Nutella 2 tbsp
Strawberry 1-2

Method of Preparation

1. Toast the bread in a toaster. Let it cool a little.

2. In the meanwhile chop the strawberries into small pieces. If it is a jumbo strawberry you will just need 1. Otherwise use 2.

3. Spread the nutella on both the slices.

4. Top one of the sides with the cut strawberries. Close with the other bread.

5. Give it a little press down. Cut into triangles and serve.

Spinach Kofta in a Minty Green Sauce

For the Kofta

Ingredients

Spinach 2 cups chopped
Potatoes 2 medium boiled and mashed
Paneer 1 cup crumbled
Coriander Powder 2 tsp
Cumin 1 tsp
Chilli Powder 1/2 tsp ( I was going for a mild dish. Adjust according to requirement)
Garam Masala 1tsp
Salt to taste

Method of Preparation

1. Mix all the above to make it come together.

2. Roll them into small balls

3. Fry them in a paniyaram pan or deep fry them. I used the paniyaram pan.

I used only 2 tbsp oil for making all these Koftas. Super healthy Hah?? And it was nice and crispy on the outside.

4. Keep aside. Add to the gravy when you are ready to serve.

Note that as with making any dish with spinach, go a little low on the salt. Once cooked the salt will be higher than you think.

For the gravy

Ingredients

Onion 1
Garlic 4-5 pods
Ginger 1 inch piece
Tomatoes 2
Spinach a handful
Mint few leaves
Milk 1 cup

To grind to a paste
Poppy seeds 1 tbsp
Star Anise 1
Clove 2
Cinnamon 1/2 inch bit
Bay Leaf
Cashew 10

Method of Preparation

1. Make a paste of all the ingredients under to grind adding a little water. Keep aside.

2. Heat a little oil in a pan. Add the sliced onions.

3. When it starts to get translucent, add ginger and garlic chopped.

4. After a few minutes, add the tomatoes and cook till tomatoes are cooked.

5. Add spinach and mint and wilt for a couple of minutes.

6. Cool and grind into a smooth paste.

7. Transfer back to the pot. Add the ground paste, 1 cup of milk and some salt. Add some more water or milk if gravy is too thick.

8. Simmer for a little while. Switch off.

Add the koftas and serve with roti of choice. I made some Mint Coriander Rotis to go with it.

For the rotis

Pulse some mint, coriander along with some turmeric powder, chilli powder and salt. Mix into the wheat flour and make a dough. Roll like rotis and cook on both sides. We enjoyed it with the Spinach Kofta.
