Ajwaini Aloo Gobi was a new experiment that I did the other day. I roasted the vegetables tossed with the spices in the oven. It is now my favoutire Aloo Gobi side dish.
I made this for a party. So the serving size is for 6-8 ppl. Adjust accordingly.
Ingredients
Aloo 1kg of baby potatoes
Gobi/Cauliflower 1 big one.
For the paste
Ginger 1 big piece
Garlic 6 pods
Green Chilli 1
Pepper 1 tsp
Ajwain 1/2 tsp
Chilli Powder 1/2 tsp
Star Anise 4
Clove 2
Cinnamon 1 inch piece
Turmeric 1/2 tsp
Salt to taste
3 tbsp oil
Method of Preparation
1. Cut the potatoes into rounds. I cut smaller ones by 2 and slightly bigger ones by 3.
2. Separate the florets of the cauliflower.
3. Grind all the ingredients under 'for paste' into a fine paste. Do not add any water.
4. Toss the vegetables with the paste.
5. Line a baking tray with foil. Layer the vegetables. Drizzle some oil on the top.
6. Preheat oven to 200 C and then roast for about 30 minutes tossing every 10 minutes.
It will be good if you can cook them separately. I did not have enough time. So cooked together. Cauliflower cooked quickly. So I did not get that roasted look.
