Spinach Kofta in a Minty Green Sauce



For the Kofta

Ingredients

Spinach 2 cups chopped
Potatoes 2 medium boiled and mashed
Paneer 1 cup crumbled
Coriander Powder 2 tsp
Cumin 1 tsp
Chilli Powder 1/2 tsp ( I was going for a mild dish. Adjust according to requirement)
Garam Masala 1tsp
Salt to taste

Method of Preparation

1. Mix all the above to make it come together.

2. Roll them into small balls

3. Fry them in a paniyaram pan or deep fry them. I used the paniyaram pan.

I used only 2 tbsp oil for making all these Koftas. Super healthy Hah?? And it was nice and crispy on the outside.

4. Keep aside. Add to the gravy when you are ready to serve.

Note that as with making any dish with spinach, go a little low on the salt. Once cooked the salt will be higher than you think.



For the gravy

Ingredients

Onion 1
Garlic 4-5 pods
Ginger 1 inch piece
Tomatoes 2
Spinach a handful
Mint few leaves
Milk 1 cup

To grind to a paste 
Poppy seeds 1 tbsp
Star Anise 1
Clove 2
Cinnamon 1/2 inch bit
Bay Leaf
Cashew 10

Method of Preparation

1. Make a paste of all the ingredients under to grind adding a little water. Keep aside.

2. Heat a little oil in a pan. Add the sliced onions.

3. When it starts to get translucent, add ginger and garlic chopped.

4. After a few minutes, add the tomatoes and cook till tomatoes are cooked.

5. Add spinach and mint and wilt for a couple of minutes.

6. Cool and grind into a smooth paste.

7. Transfer back to the pot. Add the ground paste, 1 cup of milk and some salt. Add some more water or milk if gravy is too thick.

8. Simmer for a little while. Switch off.

Add the koftas and serve with roti of choice. I made some Mint Coriander Rotis to go with it.





For the rotis 

Pulse some mint, coriander along with some turmeric powder, chilli powder and salt. Mix into the wheat flour and make a dough. Roll like rotis and cook on both sides. We enjoyed it with the Spinach Kofta.

  6. wow..delicious,glad that u used the wonder pan..I too made these some time back,still in my drafts,but I steamed them and shallow fried as I don't have the paniyaram pan...:-)
