Batata Nu Shaak - Gujarati Potato Curry



A very simple Potato Dish prepared in the Western State of Gujarat. I made it as part of the Gujarati Thali. Check it out for all other dishes from the cuisine.

Ingredients

Potato 4 cubed (no need to peal)
Tomato 1 chopped finely
Oil 2 tbsp
Mustard Seeds 1/2 tsp
Cumin Seeds 1/2 tsp
Hing a little
Turmeric Powder 1/2 tsp
Red Chilli Powder 1 tsp
Cumin Powder 1 tsp
Coriander Powder 1 tsp
Sugar 2 tbsp
Salt to taste
Coriander Leaves to garnish

Method of Preparation

1. Heat oil in a pan. Add the mustard seeds.

2. When it sputters, add the cumin seeds, hing.

3. When it sizzles, add the cubed potatoes. Saute for a couple of minutes.

4. Add the turmeric powder, chilli powder, cumin powder and coriander powder. Saute for another minute.

5. Add the chopped tomatoes, sugar and 1 cup of water.

6. Cook in low flame till all the water is absorbed and the potatoes are cooked.

7. Garnish with finely chopped coriander leaves.

Serve with some warm rotis.

  1. No Gujju meal is ever complete without this Aloo. I never find any gujju who comes veggie shopping go without aloo in his bag. The curry looks wholesome and want to pop immediately into the mouth types!
