Paneer Kurma

I usually make a Vegetable Kurma as a quick and easy side dish for roti or even for dosa. I tried a slight variation to that by adding some Paneer to it. I never knew my son loved Paneer so much. He really enjoyed  this dish, so did my husband. I made it with coriander parata on that day. It made an excellent combination

Ingredients

Paneer 1 cup, cubed
1 Big Potato, boiled and cubed
Mixed Vegetables 1.5 cup steamed

Onions 2 sliced
Ginger 1 inch piece finely chopped
Garlic 3 pods finely chopped
Tomatoes 4 chopped

Turmeric Powder 1/2 tsp
Chilli Powder 1 tsp

To be ground to paste
Coconut 1/2 cup
Star Anise 3
Fennel Seeds 1 tsp
Cardamom 1
Cinnamon 1 inch stick
Clove 3
Poppy Seeds 1 tsp
Bay Leaf 1
Jeera 1 tsp

Method of Preparation

1. Grind the ingredients under 'to be ground' and keep aside.

2. Heat oil in a pan and add the onions. When it starts to brown, add the ginger and garlic.

3. After a couple of minutes, add the chopped tomatoes. Allow it to cook well.

4. Then add the ground paste, salt, turmeric and chilli powder. Allow it to cook for a few more minutes.

5. Then add paneer, potatoes and vegetables. Stir and add a little water as required. Simmer for a few minutes.

Serve with roti/parata of your choice. Checkout the recipe for some yummy roti/parata in my blog.
