This is an instant rice that I make and is loved by everyone who has tasted it. It is a great picnic rice for us. Just enjoy with some potato chips.
Ingredients
Basmati Rice 1.5 cups
Mixed Vegetables 3 cups (I use frozen veg)
Mustard 1/2 tsp
Cashews/Peanuts few
Turmeric powder 1/2 tsp
Hing a little
Salt and oil to taste
To Roast and grind
Channa Dal 3 tbsp
Coriander Seeds 1 tbsp
Cumin Seeds 1.5 tsp
Pepper 1 tsp
Red Chillies 3
Method of Preparation
1. Cook the rice with enough water. Transfer to a big vessel and break it up so that it cools a little.
2. Heat the vegetables in a microwave and keep it ready. You can skip this and cook in the gas itself. If you are using fresh veg, allow time for the vegetables to cook.
3. Heat a pan and dry roast the channa dal. When it starts to brown, add the rest of the ingredients and roast till a nice aroma comes and it all gets roasted. Cool and powder.
4. In a pan, add a little oil. Add the mustard. When it sputters, add the cashews. then add the turmeric powder, hing and the mixed vegetables. You can optionally saute some onions as well before adding the vegetables.
5. Then add the powdered masala and salt and stir for a couple of minutes.
6. Add rice and mix well. The rice is ready to be served.
