Cabbage Sambharo - Warm Salad with Cabbage and Carrot - Gujarati recipe

Sambharo is a quick stir fry made of cabbage and carrots. It is flavoured mildly with chillies and spices. It works as a side dish as well. As with most Gujarati recipes, this also has a little sugar to add sweetness. You can skip it if you don't like it.

Recipe from here

Ingredients

Cabbage 2-3 cups Shredded
Carrots 2-3 grated
Green Pepper 1 Julienne

Green Chillies 3
Curry Leaves 2 sprigs
Mustard seeds 1 tsp
Asafotida a generous pinch

Lemon juice 1 tbsp
Sugar 1 tsp

Oil and Salt to taste

Method of Preparation

1. Heat oil in a pan. Add the mustard seeds. When it sputters, add the curry leaves, slit green chillies, asafotida.

2. When it sizzles, add the cabbage. Stir fry for a couple of minutes.

3. Add the carrots and peppers. Stir fry for a couple of minutes.

4. Cover and cook for another minute or 2. Just make sure the vegetables are slightly cooked, but have a crunch.

5. Add salt, sugar (skip if you do not like the sweetness), lemon juice. Mix and switch off.

Serve as a salad or a side dish.
