Chocolate Crinkles - Crinkle Cookies

Holiday season is definitely a great time for Baking. The fun of baking and sharing takes away the gloom of winter and just adds joy to our lives. And when you think of something festive, what better than some cookies? Well, wait it gets better. These are chocolate cookies! If that is not good enough, it gets even better. These are fudgy chocolate cookies covered with Sugar. It is super easy to make, great to bake with little ones. They will love rolling chocolate balls in sugar and being your 'helper'.

These cookies have a nice fudgy texture and taste to it. They are not overly sweet, you will love it.

Ingredients (makes 4 dozen cookies)

Unsweetened cocoa powder 100 gms (1 cup)
White Sugar 300 gms (1 1/2 cups)
Oil 1/2 cup
Large Eggs 4
Vanilla Extract 2 tsp
All Purpose Flour (Plain Flour, Maida) 260 gms (2 cups)
Baking Powder 2 tsp
Instant Coffee Powder 1 tsp
Salt 1/2 tsp

Icing Sugar (Confectioners’ sugar) 120 gms (1 cup)

Method of Preparation

1. In the bowl of an electric mixer fitted with the paddle attachment (though you can do this with a wooden spoon, too) beat together the cocoa powder, white sugar, and vegetable oil until it comes together into a shiny, gritty, black dough of sorts.

2. Add the eggs, one at a time, mixing for 30 seconds each. Add the vanilla and beat in thoroughly.

3. In a separate bowl, whisk together the flour, baking powder, salt, and instant coffee powder if using.

4. Mix into the chocolate mixture on low speed until just combined. Do not over beat.

5. Cover the dough with plastic wrap and chill the dough for four hours or overnight.

6. Preheat the oven to 350°F/175°C and line a baking sheet with parchment paper.

7. Take the Icing sugar in a plate.

8. Spoon out a portion of the chilled dough and roll them into 1-inch (2.5 cm) sized balls using your hands.

9. Roll the balls in the Icing sugar and place on the cookie sheet, leaving a little space. The cookies will expand. I was able to manage 12 cookies in my sheet.

10. Bake for 10-12 minutes. Allow to cool on the sheet for a couple of minutes.

11. Transfer to a wire rack to cool completely.

These cookies can be frozen before baking. Roll the balls and place them on parchment paper on a cookie sheet (without the sugar coating). Cover and freeze overnight. Now gather the balls and put them in a ziploc. When you are want to bake them, just take them out of the freezer, let it thaw a little bit, roll on icing sugar and bake. It may take a little longer to bake.
