Snowball Cookies - Russian Tea Cookies - Mexican Wedding Cookies - Eggless Cookie

Snowball Cookies also called as the Mexican Wedding Cookies or the Russian Tea Cookies are the simplest cookies you will ever bake. They are quite an interesting cookie to eat, very different from your Chocolate chip cookies or Oatmeal raisin cookies. (I have the recipes for those too, if are looking for them).


We had loads of fun baking these today. Just in time for Santa. Am sure our Santa will be superpleased with the treat we are offering him. The weather is windy and rainy today.  So Santa is sure to appreciate these wonderful snowball cookies that we are going to leave for him under the tree. 


These cookies just use basic ingredients like flour, butter and a very little sugar. Most of the sugar taste of the cookies come from the dusting on the outside. They are loaded with nuts, typically Pecans. But feel free to use any nut of your choice, you just cannot go wrong. An interesting thing is it does not use any baking soda, baking powder or eggs.

Ingredients (Makes 24 cookies)

All Purpose Flour 130 gms
Peacans Finely chopped 1 cup
Salt 1/2 tsp
Butter 1/2 cup (113 gms), soft at room temperature
Granulated Sugar 33 gms
Vanilla 3/4 tsp

Powdered Sugar 90gms, 3/4 cup (may be a little less)

Method of Preparation

1. Pulse the pecan in a food processor till it is finely chopped. Do not make it into powder. The texture adds to the taste in the final cookies. 

2. Beat the sugar and butter till it is light and fluffy. 

3. Add the vanilla and mix again. 

4. Mix the flour, pecans and salt in another bowl.

5. Add to the butter mix and combine. It will just take a min. 

6. Collect the dough and refrigerate for an hour. 

7. Preheat oven to 190 C (375 C). Line a cookie sheet with parchment paper.

8. Roll the dough into little balls. As I tell every time, I usually measure the dough and the based on how many cookies I want I just calculate how much each piece should weigh. Then scoop out the required amount, weigh the first 2-3. You will get a hand of how much dough is needed for uniform cookies :-) or you could not be obsessive and just eyeball it. 

9. Place them in baking sheet. I did it in 2 batches. 

10. Bake for 13 min (check your oven and decide how much you need. many recipes call for 15-20 min).

11. Rotate the tray half way thru. 

12. Let the cookies rest in the tray for a couple of min. Cool in wire rack for 10 min.

13. Take the powdered sugar in a ziploc bag. Add a few cookies at a time and give it a shake to coat. 

14. Remove and place in wire rack. Repeat for other cookies. 

15. After about an hour, coat the cookies again by the same method.
