Zucchini Oats Patties - Vegan

Zucchini makes a wonderful ingredient for Patties and fritters. Now the key for me was to make it Vegan and Healthy. Most of the times, you will see egg being used as a binder. I did not obvoiusly want to use egg, but neither did I have any flax to substitute. But the moisture from the zucchini is more than enough binder for this patty.



Oats adds the moisture sucking element here. So I have eliminated the need for flour or bread crumbs. And the few ingredients that I have used impart awesome flavour to the burger. With just a tsp of oil for 4 burgers, it is a win win recipe.



Ingredients
Zucchini/Courgette 1 grated
Oats 1/2 cup
Garlic 2 pods
Red chilli flakes 1 tsp
Coriander leaves handful chopped
Oil 1 tsp
Salt to taste

To serve
Onions 1 sliced and sauted
Bread of choice

Method of Preparation

1. Grate the zucchini and squeeze in between hands to get rid of excess water.

2. Add a couple of cloves of finely grated garlic, red chilli flakes and salt.

3. Finely chop coriander leaves and add to the bowl. Mix well.

4. Finally add the oats. Mix and knead with hands till everything comes together.

5. Separate into 4 balls.

6. At this stage wash your hands and work with slightly wet hands. Trust me it is magic.

7. Pick up each portion and roll the balls. and flatten gently.

8. Heat oil in a pan. Just a tsp would be more than enough. Keep pan in medium heat.

9. Place patties in pan and let it cook for a few minutes.

10. Flip and press down and cook on that side as well till nicely browned and cooked.

Serve as a filler for burger, or an open sandwich. It tasted great as a tea time snack as well (like a bajji or pakoda, just that it is not deep fried!!).
