Sweet Potato Cakes with Spicy Coconut Tomato Sauce - Vegan

Sweet potatoes are quite versatile. They are not as popularly used as it cousin the Potato. They are very healthy for you with high amounts of Vitamin C, B6, D, Iro, Magnesium and also a good source of Beta Carotene. If you are not sold, lets forget all the above. How about the awesome taste? The subtle sweetness, the creaminess. Yumm! Try this simple side made with Sweet Potatoes today.

Ingredients

For the Sweet Potato Cakes
Sweet Potato 2 Pealed and chopped into small cubes
Garlic 6 pods
Green Chilli 1
Rosemary 1 tsp chopped
Spring Onion 2
Cumin Powder 1 tsp
Garam Masala 1/2 tsp

For the Sauce
Onion 1
Red Pepper 1
Tomato 1 can (or use 3-4 fresh)
Red Chilli Powder 1/2 tsp
Rosemary 1 tsp chopped
Coconut Milk 1 can
Spring Onion 2

Oil and salt to taste

Method of Preparation

1. Heat a little oil in a pan. Add the sweet potatoes. Stir well.

2. Make a paste of the garlic and green chillies and add to the pan. Mix.

3. After a couple of minutes, add a splash of water (as little as required) and cook till the sweet potatoes are nearly cooked and all the water is evaporated.

4. Add the spring onions, rosemary, cumin powder, garam masala and salt. Cook for a couple more minutes.

5. Let it cool and mash it well. I pulsed it in my food processor.

6. Roll into patties (I got about 15 small patties out of this mix).

7. Shallow cook in a non stick pan adding about 1/2 tsp of oil for a batch of 5. Turn and cook the other side as well.

8. To prepare the sauce, heat a  little oil and add chopped onions and red pepper.

9.  Saute till it becomes translucent.

10. Add tomatoes, rosemary, chilli powder and a little salt. Cook for 5-10 min till the tomatoes are done.

11. Cool and make a puree.

12. Return back to the pot and add the coconut milk. Bring to a boil and simmer for a couple more minutes.

Serve the sauce and the patties together. You can serve it with some rice, quinoa, couscous or even as a side dish for roti.
