Ingredients
Rice Flour 3 cups
Maida 3/4 cup
Jaggery 1 cup
Coconut - cut into small pieces 1/4 cup
Cardamom powder 1/2 tsp
Banana (usually small banana is used. Since i did not get that here, I just used the long soft banana) 1.5
Ghee 1 tbsp
Oil for frying the appams
Method of Preparation
1. Heat the Jaggery with 1 cup water till it is melted and gets to a thick consistency. Let cool a little.
2. Heat 1 tbsp of ghee in a small pan and fry the chopped coconuts till reddish brown. Make sure it is not burned.
3. Mix Rice flour and maida in a bowl with cardamom powder.
4. Mash banana and add it to the above mix.
5. Add the melted jaggery and mix. Add more water (I used a little more than a cup of water) to make it into pouring consistency. It should be very think though.
6. Add the coconut and mix well
7. Pour little oil into each hole of the pan. When the oil heats up, pour little batter into each hole.
8. Cook till it starts to brown a little, turn and cook for a bit more. Remove from the pan.
9. Repeat for the rest of the batter.
appam looks delicious .. wish i 'd also got to taste few of your appam :)

i needed this yesterday.. my appams never come out well.. but then i made it..but did not add the maida.. it came out ok.. not great.. tasted great.. but looked just about ok.. will try next time after adding a lil bit of maida..
