Potato Fry

Potatoes are so popular in Indian cooking. If you start listing the recipes using potatoes, there will be no end to that list. I usually make simple potato fry by boiling it first and then cutting into cubes and shallow roasting them in oil.

Another method of making simple potato fry is what I wanted to suggest here. It is popular in some households. My mom made it only rarely. So I always forget about this one. This is another one of my favs from my paatti (grand mother)'s cooking.

The recipe's important part is how you cut the potatoes. The rest is the same as any dry curry.

Ingredients

Potatoes 2 big
Musturd 1tsp
Channa Dal 1 tsp
Chilli Powder 1 tsp
Besan (Chick pea flour, kadala maavu) 1 tbsp
Turmeric 1/2 tsp
Hing - little

Oil and salt to taste

Method of Preparation

1. Do not peal the potatoes. Cut them into small pieces. approx 1 cm by 1 cm. See photo.

2. Heat oil in a Pan and add the musturd. When it sputters, add Channa dal. When it starts to brown, add the Turmeric Powder and Hing.

3. After a few seconds, add the cut potatoes. When it half cooked, add the chilli powder, besan and salt. Mix and roast in a slow flame till it cooked well and nicely roasted.

4. Serve as a side dish with rice. Goes specially with Rasam.
