Multi Grain Multi Seed Buttermilk Rolls


As you know I bake as part of a Baking Group called We Knead to Bake (Click here to see all the breads baked so far). Aparna gives us recipes every month and all we have to do is Bake. Simple isn't? Well unfortunately this month she could not give us a recipe to bake cause her oven was giving her misery. So we decided to bake a bread of our choice. I wanted to bake from Aparna's recipe. So I started bookmarking a few. And was at loss. She has so many recipes in her collection. Then finally I decided to go with these cause I had been meaning to make a burger and this worked wonderful with it.

Ingredients

All Purpose Flour (Plain Flour, Maida) 2 cups (260 gms)
Whole Wheat Flour 1 cup (130 gms)
Powdered Oats 1/4 cup
Powdered Flax seeds 2 tbsp

Instant Yeast 2 tsp
Sugar 1 tbsp
Salt 1 tsp

Yogurt ** 1/2 cup
Warm Water 3/4 cup

Sunflower Seeds 2 tbsp
White Sesame 1 heaped tsp
Black Sesame 1 heaped tsp

Milk for brushing the top
Oil for greasing

Method of Preparation

1. Add the All Purpose Flour, Whole Wheat Flour, Powdered Oats, Powdered Flax seeds in a mixing bowl.

2. Add the yeast, sugar and salt. Mix well.

3. Add warm water and yogurt (at room temperature) and knead well. The idea is to use buttermilk. But we just make buttermilk in India by mixing yogurt with water. **Technically, buttermilk is the liquid left after churning out butter from cream. It will have a slight sour taste to it.

4. Roll into a soft dough and keep covered in a well oiled bowl for 1-2 hours till it is doubled in size.

5. Punch out and divide into 6-8 portions. I made 8 rolls with this.

6. Roll each portion into a smooth ball. Place it spaced out in a baking sheet. Cover it.

7. Let it rise for another 30 min - 1 hr.

8. Brush the top with some milk and sprinkle the seeds.

9. Preheat oven to 200 C (400 F) and bake for 20-25 min. Mine was ready in about 22 min.

Serve with a soup or like I did use it for a burger.
