Mangakari (Instant Mango Pickle)

Mangakari (Instant cut raw mango pickle) is my favourite pickle. I can just sit and eat that pickle on its own. It is very very easy to make. Once you cut your mango (which did take me a little time) it takes about 5 minutes to make it.



Ingredients

Raw Mango 1 Big

Mustard 1/2 tsp
Fenugreek seeds 1/4 tsp (or less if you do not like the bitter taste)
Hing generous portion
Curry leaves few cut finely
Chilli Powder 1 tsp
Turmeric 1/2 tsp

Gingelly oil (Sesame oil, Nallenna) 3-4 tbsp
Salt 1tsp

Method of Preparation

1. Cut the mangoes - cut into small pieces as shown below and keep in a bowl.


2. Add the chilli powder and salt to the mango and stir well.

3. Heat oil in a pan and add the add the mustard. When it sputtes, add the fenugreek seeds, hing, turmeric and curry leaves. Let it sizzle for a few seconds.

4. Pour it over the mango mix. Stir and enjoy.

Some people like it better if it sit for a day or so. I like it better immediately after it is made. It will keep well outside for a couple of days and in the fridge for upto a week.

We enjoyed this today with some Kanji and payaru. Intend to finish off the rest with some yummy curd rice.
