Aloo Mutter Parata

Aloo Mutter Parata is my solution to add some healthy stuff to my parata, but still not give up on my favorite - aloo parata.


Ingredients

Whole Wheat Flour 1.5 cups
Potato 1 big boiled
Green Peas 1/2 cup
Coriander Leaves 3 tbsp
Chilli powder 1 tsp
Cumin 1 tsp
Turmeric 1 tsp
Salt 1 tsp
Hing a little
Oil 1 Tbsp
Ghee for spreading on Parata.

Method of Preparation

1. Prepare the wheat flour by adding some salt, turmeric, oil and water like you would for making roti. Keep it wrapped for a couple of hours. Split into 6 small balls

2. Mash the potatoes. Mash the peas and add to the potatoes. Make sure the peas are dry.

3. Add the coriander leaves, chilli powder, cumin, turmeric, salt and hing and mix well. Separate them into 6 balls as well.

4. Roll each dough ball into a very small circle. Place the vegetable mix in the centre and pat it down.

5. Roll the sides of the dough to close the vegetables. Flatten, dust with wheat flour and roll into thin paratas.

6. Put it on the tawa and spread some ghee on each side and cook. I got myself a silicone pastry brush to spread the ghee. It was better than trying to use the back of spoon as I usually do :-)

Enjoy with Raita (or plain yogurt) and pickles!!
